Cucumber Cantalope Salad

Yield:  4 portions

1/2 cantaloupe, small dice

4-6 cucumbers, small dice. The ratio should be the same as the volume of cantaloupe

1 tsp of young ginger, fine mince

1/4-1/2 tsp of ground white pepper

1/4-1/3 Cup of seasoned rice vinegar


  1. Combine cantaloupe, cucumber, ginger, white pepper and rice vinegar and using a spatula, gently toss all ingredients. 

  2. Refrigerate for 20-30mins and Enjoy!
